Just extract the files to your harddrive (with 7-Zip or WinRar), then open the folder and doubleclick "MKVextractGUI.exe" to run, no installation required. The useage is very simple but I've included a screenshot I made, that will hopefully help, if you're in any doubt about how to proceed.
